Most couples who are married where one is a Mormon and the other isn't, usually stems from a situation where they both were married in the temple, then one of them lost their faith sometime after that. Marrying a non-Mormon is not something you do it is something that happens. Unconditional love, excellent communication, and unwavering support. As more and more people marry out of their faith, the subject of interfaith marriage will become more and more important. You will desire to have that eternal marriage, to have that support in taking kids to church, to be able to talk docterine with a like-minded individual. Or get them met elsewhere. Real love just happens. My faith, while less orthodox, has certainly matured.
Single women who are educated, regardless of religion, are also going to find similar gender imbalances among their educated peers nowadays. I'll definitely talk with her about my concerns, and will be spending time with her family over the upcoming holidays so that will be a good chance to see how they treat me.
